Simple Quinoa Coconut Porridge

Components

90g white quinoa
300ml plant based milk
1 teaspoon natural sweetener of choice
1 tablespoon chia seeds (preferably whole, but milled will also work)
pinch of salt
1/2 - 1 teaspoon ground herbs or spices of choice (we like cinnamon)
1/2 - 1 teaspoon adaptogens of choice (we like maca, chaga, he shou wu, ashwaganda, pine pollen or tocotrienols)

Process

1. Start by heating your plant based milk in a medium saucepan over a medium heat. Whisk in your natural sweetener of choice along with a pinch of salt and your preferred herbs, spices and adaptogens (if using). Bring to the boil.

2. Add the quinoa and chia seeds and continue to boil for 4-5 minutes then reduce to a low heat, cover with a lid and simmer until the quinoa has absorbed all of the liquid. Use a wooden spoon or spatula to stir occasionally.

3. Once all of the liquid has been absorbed, remove from the heat and transfer into bowls. Serve and enjoy immediately or allow to cool and store in an airtight container in the fridge to enjoy chilled, or to re-heat another time.
